Daybreak is a fresh basket cheese with a springy body, gentle tang, and light salinity that builds as you eat. High moisture, rindless, clean buttermilk notes, and a texture that softens as you bite.

It is a modern American interpretation of Tzfatit, an ancient cheese from the community of Safed, where Jewish cheesemaking is documented as far back as the 12th century and continues to this day.

Great as a breakfast cheese alongside bread or pita, eggs, olives, and olive oil, or with fruit and honey in the spirit of stracciatella. Classic in chopped salads or fattoush, or served with mint and watermelon on a hot day. Makes an elevated Caprese, and melts with a generous pull. Perfect for knafeh desserts.

A nigella seed version is available. Nigella Sativa, often called black seed or black cumin (though not related to cumin), is an onion seed that adds a crunch with notes of onion and thyme.
