Where Do We Ship To?
We currently ship anywhere within the lower 48 US States. Due to perishability, we currently do not ship elsewhere as transit times and costs are incompatible with the product.
How Do We Ship?
We ship all items overnight via UPS® Next Day Air in chilled insulated conditions as we deem to fit the product type, condition, box size, placement inside the box, and weather along the expected route.
When Do We Ship?
All orders received by the cutoff time of Tuesday 5 pm will be shipped either on Wednesday or Thursday. We determine the shipping day based on our production schedule for that week. We ship as late as possible to minimize transit times from our fridge to yours. Please be ready to accept your shipment before 10 am (please use the automated tracking link you will receive by the system. Rural addresses delivery may be as late as 11 pm). Our shipments are designed to never originate, transport, or arrive on weekends.
About Arrival Conditions and Temperatures
Cheese may not arrive cold at its destination, but that is OK so long as it arrives in a timely manner and the packaging is intact. Our fresh cheeses are made by long-fermentation in the mid-70ºF's. Our Aged cheese spends weeks or months in an aging cellar in the mid-50ºF under extreme moisture. The 10-18 hour transport to you that starts out very cold for several hours, will not harm or sour the cheese. Please refrigerate cheese that is at room temperature before opening it for the first time. Remember that cheese is best consumed and at its most flavorful at room temperature. Note that odors may be strong when the box is first opened. That is because warmer temperature brings out aromatic compounds that evaporate when fat softens. Odors will significantly reduce once refrigerated. Please note that the box may have been tossed around a bit during shipping and the side marked "This Side Up" may have not always been up at the carrier's possession.
