★ SILVER - 2025 126th International Cheese and Dairy Awards, UK
Madcap is our new limited-release lactic bloomy rind cow's milk cheese. Like our Intergalactic, Madcap also uses the enzyme of cardoon thistle flowers (globe artichoke) in place of rennet, a new twist on an ancient Roman practice (making it vegetarian too). Its unique cone shape is designed to ripen in a particular pattern and pace. The proprietary blend of cultures forms a delicate wrinkly rind and loads the cheese with lemon-like acidity, notes of tropical fruit and fresh-cut grass, with a lingering finish. Aged for 14 days, the final texture yields an exceptionally creamy paste and light blond rind.
Madcap was our cheesemakers’ answer to a challenge we gave them: develop a competition-worthy entry for the International Cheese and Dairy Awards in the UK. Remarkably, just weeks after the concept was born, it brought home the Silver medal.
