This award-winning all-American beauty is our signature. It's a soft lactic cow’s milk cheese, coagulated with Iberian cardoon thistle flowers rather than animal rennet, a tradition that dates back to the Roman Empire (so yes, it is vegetarian!)
Intergalactic is herbaceous and creamy with a touch of tang and unique olive-like finishing note. It has a melt-in-your-mouth wrinkly rind that is followed by gooey creamline with a fluffy center core.
Each of these little cubes is cave-ripened for 14 days with a great deal of skill and labor. The wooden box not only protects the delicate rind, but also allows you to bake the cheese right in it for an oppulant spoonable experience. (350ºF for 15-20 min, a tablespoon of wine optional -easy!). Many customers love using the wooden boxes for crackers or nuts on their cheese boards. Intergalactic is ACS-certified as an American original.
