Intergalactic is an all-American beauty. It is a soft-rinded lactic cow’s milk cheese that is coagulated with the stamens of cardoon artichoke thistle flowers, a tradition dating back to the Roman Empire (so yes, it is vegetarian!). The 3.5 oz (100g) cubes cave-ripen for 14 days, forming a melt-in-your-mouth wrinkly rind. The fudgy texture beneath the rind gradually turns fluffy and tangy towards the center core. As the cheese ages, it becomes further supple throughout. This delicate flower needs some protection so it is set on a moisture pad, wrapped in greaseproof paper, and placed in a sustainable poplar wood box.
Tangy, buttery, and balanced. Herbaceous notes of grass in the warm seasons and hay in the cold seasons. Persistent minerality. Very unique green olive-like finish.
Serve & Pair
Intergalactic is best served at room temperature. Use neutral crisps or a crusty fresh baguette. Berries and cherries highlight the flavor. In cheese plate, arrange it to be tested before going for stronger tasting items. Pairs well with dry white or rosé, cava or Champagne.
Try baking It In Its Packaging!
To bake, simply remove the moisture pad from under the cheese and return it to its paper wrapper and wooden box. Bake for 15 minutes at 350ºF. Spoon over crisps, chutney or jam, vegetable and cured meats, cornichons, berries... whatever tickles your fancy! Check out this video from our Instagram
Keep & Care
Refrigerate in your deli drawer. Intergalactic is stable for 3-4 weeks unopened, but it will continue to ripen in the fridge.
