Spruce bark belting is a centuries-old Alpine method for cold-season cheesemaking—when the milk is at its richest. Treehug challenges this tradition by replacing rennet with the enzymes of cardoon thistle and lady’s bedstraw flowers, natural Mediterranean coagulants with a history of their own.
The bark and washing impart earthy aromas, with subtle wood sap and smoky notes. Beneath the rind, the texture is spoonable, fudgy, and buttery, delivering a luxurious savory experience. Need another reason to love Treehug? Peel back the top rind, keep the bark, create a dimple, and fill with white wine. Bake for 15 minutes, and you’ve got an opulent fondue centerpiece to remember. NOTE: The rinds of all our cheeses are edible but the tree bark is not. This cheese is best enjoyed by cutting off the top find and digging in rather than cutting the cheese.
