True to its maritime namesake, Atlantis is a semi soft cheese with rind that is washed in atlantic ocean seawater infused with 6 types of our local atlantic seaweed varieties. Aged for 45-60 days, the during which the rind develops a kaleidoscope of colors and the seaweed imparts glutamine, making deep umami flavor. This cheese is beachy, light and very approachable with funk that’s not over the top. A great showcase of grass-fed summer milk.
