Made seasonally, from late summer to fall, we cellar-age it for 45-60 days, during which glutamine in the seaweed imparts a deep umami flavor, making summer on the beach last a little longer!
Atlantis is herbaceous and has notes of apples and nori, with light, sea-like salinity. It’s a great expression of fantastic grass-fed summer and fall milk from local farms. Younger cheese will be more tart and chalky towards the center.
