- Intergalactic Award-winning and recently appearing in the NY Times, tangy, fluffy, melt-in-your-mouth rind and very distinct fun olive-like finish. It's vegetarian too as it is coagulated by flowers instead of rennet. Try baking it in its own wooden crate
- Moonrise Bronze awardee at the 125th International Cheese Awards in the UK and just named by Culture Magazine top of the list of their favorite cheeses in the winter Vegas trade show amongst hundreds of other cheeses. Silky with a finish of roasted peanuts
- Treehug Out cold season special. Bronze at the World Cheese Awards in Wales in October. It keeps morphing throughout the season and the current batch is super supple and beautifully runny, and rich, with high notes of garlic, umami, and pine from the tree bark wrapping.
- Toasted Another Bronze at the World Cheese Award, this delicate lactic puck is torched with wild thyme and sage. It then ages until a rind covers the herbs to leave you with a bit of campfire and herbaceousness. We make them infrequently so here's a way to get one!

THE STATE OF THE MILK ADDRESS:
The State of Our Milk is great! Sadly it seems global warming is the cause behind this extremely mild winter. But this also means that greens are still growing (though not as nutritious so quality hay is still rich in the feed). The herds are happy to run outside, relax and move their bodies. We actually see a drop in milkfat early this year which is the milk equivalent to your Maple tree butting in early February. The milk however is nutrient-dense, super sweet, and flavorful. Good cheese needs great milk, and that can only happen when land and animals are treated with care. This is the hard 24/7 work of small family farms.
